EGGLESS BANANA WALNUT CAKE:
From the time I’ve started baking, my gourmets have been my dear husband and my brother in law…and trust me they have been doing a good job. To further motivate me my BIL decided to give away his oven to me as it was lying idle at home. This thought of his has been very motivating and now there’s no looking back:) ..To add to this, the excitement of having an oven and being able to bake was unexplainable as I had thousands of things to try out..
My husband is still trying to figure one thing about me; ‘what is it with baking cakes, and the happiness related to getting the cake right!!’
Well, I got this recipe from my friendly neighbor Roma (www.romasharma.com). It’s a very easy to make and tasty recipe. But due to me being a novice at baking, I mistook flour for wheat flour and added it. Nevertheless, it turned out awesome and is a very healthy option in comparison to using maida. I’ve also made some small additions. Thanks Roma for the splendid recipe!! Everybody loved it.
You’ll need:
Banana: 1 ripe (long variety)
Whole Wheat flour: ¾ cup
Brown sugar: ½ cup
Butter: ½ cup
Baking soda: ¼ teaspn
Baking powder: ¼ teaspn
Milk: 2 tablespn
Vanilla essence: ½ teaspn
Walnuts: 4-5 nos, chopped.
Salt: a pinch
Procedure:
Puree the banana and brown sugar in a mixie. Sieve flour, baking soda, baking powder and salt in a container. In another bowl beat the butter until light. Mix the puree and all the dry ingredients and butter with a dash of vanilla essence and beat the batter well. Once it reaches the dropping consistency, you can add in the walnuts. If the batter is a little too tight then add some milk to it to get the desired consistency. The mixture should just drop off the spoon, known as ‘dropping consistency’ . Preheat the oven at 180 deg C and then bake it for 25 min at 180 deg C.
