PUMPKIN PURIS:
A sweet delight made up of pumpkin, one of my favorites. Once made I cannot stop eating, especially the ones made by my mum. I also love making them as they are very easy to make are a very good option while traveling. Pumpkins are healthy and nutritious by themselves. They are zero cholestrol, low sodium and low in calories. Jaggery also is a very healthy option in comparison to sugar. So here is a very easy to make healthy sweet recipe.

PUMPKIN PURIS
You’ll need:
Orange Pumpkin (sweet one) grated: 1 cup
Wheat Flour: 1 ¾ cup
Jaggery (grated): 1 3/4 cups or as per your taste.
Elaichi: as per taste.
Khus Khus (poppy seeds): for garnishing.
Oil for frying
Procedure:
Clean and de-seed the pumkin and grate it into a cup. Mix the grated pumpkin, grated jaggery and elaichi. Keep this mixture to boil on a simmer. Once this mixture gets thicker keep sprinkling wheat flour till this mixture turns into a dough consistency. You can keep adding the wheat flour just incase the pumpkin mixture is very watery.As soon as this dough like mixture is ready, switch off the gas and let it cool. Pat the dough into a puri shape on a plastic sheet instead of rolling them. Sprinkle some poppy seeds on them, remove them from the plastic sheet and then deep fry them. Fry them till they are golden brown in color and voila, sweet pumpkin puris are ready.

very tasty.It tasted just like ATHRASA or KAJJAYYA ,but that is very laborious,but pumpkin puris r very easy & as U said U just can’t stop with one……….
